About this course

Cake icing and sugarcraft is as much of an art as it is a craft. Anyone who is familiar with this activity will understand that often it is as nice to look at the finished product as it is to eat it!

Our three-term course is open to anyone with an interest and enthusiasm in cake icing and sugarcraft and who may have wondered how beautiful cake creations are made. No previous experience is necessary.

What will I learn?

The aim of the course is to provide you with an introduction to the techniques used to ice and decorate cakes for special occasions.

On completion, you should be able to:

  • Make a range of flowers and foliage
  • Demonstrate how to wire-up
  • Marzipan and ice a cake using sugarpaste
  • Make a range of samples showing some of the techniques used for decorating cakes
  • Stack tiered cakes

The following topics will be covered:

Term 1:

  • Making and Decorating Cupcakes - making hand-moulded unwired roses and novelty animals for cupcakes, decorating and icing cupcakes
  • Autumn sugar flower spray - making wired roses and rose leaves, Autumn fruits and leaves. Wiring up spray
  • Marzipan and Icing Techniques - how to marzipan and decorate your pre-prepared Christmas cake (traditional or novelty), making a Christmas flower spray or novelty figurines, icing cake and board with sugar paste, simple cake piping, finishing off

Term 2:

  • Spring flowers displayed in pastillage flowerpot - snowdrops and snowdrop leaves, primroses and primrose leaves, other Spring flowers and foliage, making a pastillage flowerpot, assembling the display
  • Run Outs - traditional run outs, outlined pressure-piped, pressure-piped
  • Brush embroidery
  • Royal icing side designs- How to pipe simple drop lines and dots to decorate the side of cakes
  • Bas Relief - choice of subject
  • Easter Novelties - sugar paste figurines for Easter, decorated crème eggs for children

Term 3:

  • Sugar Flower Sprays for a Summer Wedding - making a variety of sugar flowers such as lilies and roses and leaves suitable for a summer wedding cake, wiring up sprays
  • Two-Tier Wedding Cake - marzipan & sugarpaste your pre-prepared fruit cakes/polystyrene cake dummies. How to stack cakes and assembling flower sprays on cakes
  • Modelling - how to make sugarpaste bride and groom figurines.

There are no entry requirements associated with this course.
Study, assessment and qualifications

Assessment is informal, based on your personal targets and the learning outcomes and will be undertaken regularly with you by the course tutor. There are no formal qualifications associated with this course.

Additional costs and information

You will need to bring your own basic equipment:

  • Ball tool
  • Small non-stick rolling pin (6”)
  • Non-stick board
  • Foam pad
  • Petal base/Trex
  • Pallet knife (sugarcraft not kitchen type)
  • Florist oasis or polystyrene (to put wired flowers into when making).
  • Small wire cutters
  • Nail scissors
  • Tool box
  • Edible glue or CMC powder (pinch mixed with boiling water in small jar)
  • Various size paintbrushes (Tutor will advise)
  • White sugar flower paste

There will be various cutters, wires, paste and dusting colours required throughout the course. The tutor has prepared a detailed list of items needed each term, please contact the Devizes Enterprise Centre on 01380 723989 to request a copy of this list.

  • Progressive
    This is a progressive course that consists of three individual terms. Students are generally required to complete the first course before moving on to parts two and three, however it is possible to join mid-year if you have appropriate experience. If you have not attended the first term, please contact Customer Services before enrolling and paying for the course.
